Dinners have been really hard for me lately. I’ve sorta been in a funk when it comes to weeknights. It’s hard to have enough energy to make dinner. I dream about what to make all day. I go grocery shopping at lunch and then, when I actually get home to make dinner, I stare at my pots and pans wishing for them to make the meal for me.

I can’t pretend that I always want to cook. Yes, I love food, and I love cooking, but sometimes I need that Panera salad that Daniel is really good at picking up on the way home. I mean, the guy can’t cook, but he sure can go though a drive-through window.
So, when those days happen repeatedly, I fall back on pasta. It does so much for my happiness and appetite. Especially, when it’s smothered with a perfect butter sauce, packed with a mix of fresh herbs, and accompanied with sun-dried tomatoes, and goat cheese. It’s right up my dinner wheelhouse.
Let’s talk about this butter sauce. It’s not just melted butter with some herbs thrown in. Butter sauce is delicious and is most prominently used in seafood dishes. Ever wonder what you’re dipping that lobster tail into? So good, right? I’m not interested in doing it the old-fashioned way. I modified the butter recipe a bit. It’s just as good, dare I say, better. No need to clarify butter after an 8-hour work day. PREACH.
As is well-documented in my recipes, I love fresh herbs. I’m talking a cup of fresh herbs to bring this butter sauce to life. As if it wasn’t already perfect! Add a pop of sun-dried tomatoes, and tart and creamy goat cheese. WHAMMY.
I don’t think I really need to say much more. I mean, what words in the recipe title (Sun-Dried Tomato and Goat Cheese Pasta in Butter Herb Sauce) would make you think that it wouldn’t be flat-out delicious? This pasta brings me so much joy. It brings me “I’m getting in some sweat pants right now, and I’m watching whatever is on TV” joy.

This Sun-Dried Tomato and Goat Cheese Pasta in Butter Herb Sauce is a perfect weeknight meal. A simple and easy butter sauce makes this dish perfection.

Ingredients
1 package of linguini
2 tablespoon white wine
2 tablespoons white wine vinegar
2 tablespoons heavy cream
1 cup butter
1 cup fresh basil, chopped
2 tablespoons fresh oregano, chopped
2 tablespoons fresh rosemary, chopped
¼ cup fresh chives, chopped
1 tablespoon fresh thyme, chopped
½ cup goat cheese, crumbled
5 sun-dried tomatoes, chopped
Instructions
Cook the pasta according to package directions, rinse gently, and set aside.
Place the white wine and white wine vinegar in a small saucepan over medium heat and simmer until it’s reduced by half. This should only take a few minutes. Whisk in the cream until incorporated. Add in the butter one tablespoon at a time, and continue to whisk until all the butter is added, and the sauce is smooth. Remove from heat.
Add the chopped herbs and sun-dried tomatoes to the butter sauce. Toss the herbed butter sauce with the reserved linguini. Add the crumbled goat cheese and gently incorporate. Serve immediately.
