It’s my one goal this Christmas to keep it as stress-free as possible. And, I know the best way to do that is to control my controllables. Keeping the shopping for online and delivery. I want to make plenty of cookies, watch all the movies, wear all the fuzzy socks and drink coffee laced with orange peel and maple. And, maybe even have a slice of cake for breakfast as it allows.
This is definitely one of those cakes. A light and fluffy crumb that is packed to the brim with flavor. Just a spread of whipped buttercream frosting will do it. And if you have some cinnamon and sugar, or cinnamon sticks, maybe star anise? That’s all you’ll need for decoration.
I developed this cake to be perfect for smaller gatherings, and simple enough that all cake novices would be able to execute with ease. It just takes one 9-inch pan and barely any oven time. You won’t need to level the cake – forget about doing a crumb coat. We’re keeping it as easy and simple as possible here.

Hi there, I would love to make a gluten free version of this cake. Apart from omitting the all purpose flour and replacing it with GF all purpose flour, what else would you recommend to ensure that it doesn’t end up turning into a pancake? It looks so delish and would love to be able to devour it!

The only way to prevent this is to whip the egg white into soft peeks and fold it into the batter at the end. That’s what I would do but disclaimer – I haven’t tested it with this recipe yet 🙂
