Last week, as you might know, I had the privilege of speaking at a middle school writing class. I got up super-early—which to be fair—was the same time I get up to blog anyway, but this time I slapped on a black dress and hopped in the car with Daniel. It was the first time I got to experience Daniel’s hour-long commute, and it became clear at mile marker 270, that I should have brought a coloring book.

By the time the first bell rang, I was spoiled—from the coffee, (so much coffee!), to the questions and compliments, it was an absolute pleasure. Mrs. Cloutier, who was my high school writing teacher, my Mom’s friend, and my Dad’s student; was the perfect hostess of a teacher. She even snagged me some Anthropologie earrings and a Starbucks gift card as a thank-you. Can you say “love language”?!

I walked the students through a blog post and then had them write one of their own. And, because these kids were so awesome, and because their teacher agreed to give them extra credit if I published a few of their words, I give you junior high food bloggers…

I am always hungry. My mind is always 50% sports 5% on school and 45% on food. So, food is a significant part of my thoughts. My mom wonders why I’m always hungry and it’s mostly because I love to eat.

It’s at that turning point in spring, that transition from harsh winds and bare trees to balmy air and soft grass. It’s when you aren’t sure if you should bring your coat or leave it behind like you did in the sweet days of summer. It’s unsure if soup for dinner is still okay or if it should be salad and chicken, ending with ice-cream. What can be sure is that pizza is perfect for a night on the patio with those you love.

There were plenty of amazing writings! And to be fair, so many of them I still haven’t read yet. But, the consensus overall is that these kids really, really love food.

With these longer days comes a shorter time period to cook. I’ll be working through the weekend and sometimes what I need isn’t a few hours in the kitchen. What I need is a one-bowl, cast iron skillet, salted brownie. Actually, one measuring cup and one measuring spoon while we are at it. Just whip up the thick, chocolaty batter and place it in a medium-sized, cast iron skillet. As soon as it’s done, smatter chocolate Ghirardelli chips over it so they melt, because who needs to dirty an extra bowl to make frosting?

Cast Iron Skillet Salted Brownie

This salted brownie recipe only requires one bowl, one measuring cup and spoon. Easy, delicious, chocolaty gooey goodness on a week-night!

Ingredients

Scale

1 tablespoon butter

4 eggs

1 cup granulated sugar

1 cup brown sugar

1 cup baking cocoa powder

1 cup melted butter

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup flour

1 1/2 cups milk chocolate chips

Jacobsen Sea Salt for topping

Instructions

Preheat the oven to 350 degrees and melt the butter a medium-sized cast iron skillet.

Whip the eggs in a standing electric mixer until combined. Pour in the sugars, then add the cocoa powder, melted butter, baking powder, salt, and end with the flour. Whip until the batter starts to pale, about one minute and place in a medium (10-12-inch) cast iron skillet. Smooth batter and place in the oven for 25-30 minutes.

Once the brownie is done (firm in the center), generously sprinkle the chocolate chips on top of the brownie, turn off the heat, and leave the brownie in the oven for one minute. Remove from the oven and spread the melted chocolate evenly on the brownie, and sprinkle with Jacobsen Sea Salt.

Wait at least a half hour before digging in, otherwise, what a mess!
