My go to salsa is LA VICTORIA® because it uses tomatoes picked at the peak of ripeness and delivers refresssshing flavor, which is just what I need right about now when I’m sweating through about 90% of my day. Refreshing…that should be another late summer word to live by.

I’ve sautéed some ground chicken in LA VICTORIA® Salsa Thick’n Chunky Verde (loving that name btw). It’s made with real, simple ingredients and gives the ground chicken a really delightful flavor that is just plain exciting. Wouldn’t you agree? I’ve also taken to meal prepping this delightful mix and placing it in the refrigerator for the week ahead. Every time I open the refrigerator door around lunch time, I see that tempting glass container—it calls my name.

But mainly, I’ve been adding it to some crisp, cold romaine lettuce that’s been tossed in a honey lime vinaigrette. Add a heaping handful of roasted corn, black beans, cheese, avocado, and a fresh dab of LA VICTORIA® Salsa Thick’n Chunky. I finish the whole thing off with a sprinkling of red onion and cilantro. Because we are that extra when it comes to our salads.

My hope for you is that you come up with your very own words for summer to live by. I’m thinking mine are preeeetty great. But, we are all unique and deserve a little mantra of words to get us through the end of this season. Use them just before a date with a salty chip and cold salsa. Maybe they’re words of affirmation to keep you going in the right direction. Whatever they are, own them.

Salsa Verde Chicken Taco Salad

Ingredients

1 tablespoon flavorless oil

I lb. ground chicken

1 cup LA VICTORIA® Salsa Thick’n Chunky Verde Medium

2 limes, juiced

1 tablespoon apple cider vinegar

1 tablespoon honey

1 teaspoon salt

1/4 cup flavorless oil

2 heads of Romaine Lettuce, chopped

1 cup roasted corn

1 cup black beans

1 cup Jack cheese, shredded

1 large avocado, sliced

1/4 cup red onion, chopped

1/4 cup fresh cilantro, chopped

1/3 cup LA VICTORIA® Salsa Thick’N Chunky Medium

24 tortilla bowls

Instructions

|| Chicken || Place a medium frying pan over medium heat and add in the flavorless oil. Place in the ground chicken and cook while continuing to breaking up the chicken. Once the chicken has been thoroughly cooked through, drain excess water and oil and place back on the heat. Add in the Thick’N Chunky Salsa Verde and simmer for about 5 minutes. Take off the heat.

|| Vinaigrette || Mix the lime juice, apple cider vinegar, honey, and salt together. While continuously whisking these ingredients, slowly drizzle in the flavorless oil until it has thickened.

Toss the vinaigrette with the chopped romaine and evenly disperse into 2-4 bowls for serving. Top with Salsa Verde chicken, corn, black beans, shredded cheese, avocado, red onion, cilantro, and medium LA VICTORIA® Salsa Thick’n Chunky.
