Hi all! While I love talking about food, I really do! I’ve been thinking about throwing in a “recently” post every once in a while to get caught up and talk about some of my favorite things that have been going on in my life. Food will be back next week so feel free to move on if you so desire. BUT! here marks post #1. It’s a special one too, because it’s on my BIRTHDAY! So yes, Happy birthday to me.
(my niece Finlee’s little sneaky hand, so cute!)
Recently I’ve been…
Loving all things pink, all things funfetti, and all things me. I know it seems selfish, but it’s my birthday, and I love it. It’s my favorite holiday of the year. My plans for today include sleeping in (ish). Eating breakfast in bed with my Hallmark “You Are Special Today” plate and mug and watching Tangled. If you don’t already know, it’s what I do on my birthday each year. That’s a little play on the theme song, ha, ha, ha… I amuse myself. Anyway, I’ll be going to out to lunch with my friend and finally catching up on all things LIFE. I’ll grab myself my free birthday Dutch Bros coffee—tall kicker, half-sweet, pink straw, please. From there, I’ll stop by Aunt Bee’s House, a cute little antique mall where I find a lot of amazing props. I’m going to then RESIST the urge to clean the house or doing any sort of chores but I’m thinking I might end up deep cleaning the kitchen. But, I will enjoy some alone time with a good book and wait for Daniel to get home and do whatever it is he has planned. Perfection.
Recently I’ve been asked…
“Is you’re food real? Or is it just styled?” Yes, it’s all real, and yes, it’s a little styled. No, I don’t use inedible stuff to style my food. No Sharpies or Elmer’s glue. I do have a lot of tricks that I use to make food look more appetizing. But as a whole, I want my recipes to look real—not perfect. Like, who has the time for perfection? Anyway, if you do have any food styling questions, I’m all ears, and I’d be happy to answer any questions about that topic!
Recently I’ve been using…
My amazing KitchenAid Food Processor! It is a BEAST in the kitchen. Shredding cheese, making pie crust, making sweet potato pizza crust, hummus, pesto, dips—you name it! This one is by far the best one that I’ve used. It has all the speeds and attachments I need and none that I don’t. Who needs all those speed options? Just like my blood sugar, I’m only high or low. It’s been great, and it’s Kitchen Aid so I’m pretty sure this bad boy will be in my kitchen for a very long time.
Recently my type 1 has been…
Unpredictable. I know, I’m only on month 4, so I don’t expect to have this thing down. Nor do I think I’ll ever really have it down. I’ve been experiencing some lows, and it takes everything in me to not eat the kitchen sink. Mainly, I’ve been trying to lose some weight that I’ve gained since beginning insulin. It’s definitely not as easy to lose weight now. BUT, what is important is keeping my blood sugar low while not keeping it too low :). Tricky business.
Recently I’ve been thankful for…
Um, everything! Where do I even start? Life is hard, that is true. It’s a struggle, and it’s adjusting, and it can be a bugger sometimes. I have so many joys in my life it’s hard to complain. So, if I’m picking one, I would have to say I’m thankful for this space and all the hope it has given me. And, all of you! Your encouragement each day is something I’ll never be able to repay. Thank you!
Recently I’ve been loving…
My Madewell bag! It’s so amazing. It has the perfect amount of structure and give. It’s big enough to carry all my diabetes supplies but not be in the way. Plus, the leather is soft and beautiful! So happy about this bag.
Recently I’ve been eating…
A lot of soup and salad. I literally feel like I’m the noon shift at the Olive Garden.
So, here we are! My first “recently” post! It’s been fun catching up with all of you. I hope your weekend is amazing and productive! I think that you should have a slice of cake in my honor. I mean, obviously.
Wishing You the Happiest Birthday Karlee! Sounds like a beautiful day! Enjoy! You deserve this! Wishing you much joy and happiness for the coming year! Love and joy – Mary
Thanks so much, Mary! Looking forward to what this year will bring!
Happy birthday Karlee!
Thank you, Bre!!!!!!
I love it! This post gives me a bunch of inspiration for my own blog. Sometimes I feel like I get caught up in food without realizing that there are a lot of other things going on in my life that are just as important and fun to talk about!
I agree 🙂 It’s so easy to forget! and it’s so great to catch up on some of the fun “life” stuff! Hope you’re doing well, Stephanie!!!!
