No need to send out smoke signals or contact your local authorities – I’m fine. All is well. I didn’t post last week but that doesn’t mean I belong on a milk carton quite yet. It just means that when life gives you great opportunities and dreams start to come true, there is a tension between the two worlds for a while. The world of clocking-in and the world of working for myself. That’s where I’m living right now, stuck between one commitment and another. Excited, overjoyed, a little worse for the wear (did I put on deodorant today?) and basking in the hope of a future doing what I love as a full time job.
While we’re on the subject and I have your attention for a few minutes, I might take this time for a quick announcement. This coming June I’ll officially be full time blogging. Like AS MY JOB. That’s right! You may have noticed a few things changing and stretching and that’s why. I couldn’t be more overjoyed to say that a dream I’ve worked towards for three years now is coming to fruition. Bazaar doesn’t even begin to describe this feeling. More on this later and I’ll definitely be writing a full blog post about how I got here. But for now, I’m working what feels like two full time jobs and I can’t remember what it felt like to have the luxury of planning out my dinners.
Enter: Dinner already prepped, measured and planned out thanks to Fred Meyer’s Prep & Prared. When I’ve been between this client call, that contract deadline, figuring out workshop stuff and putting in hours at my part-time job… Dinner isn’t ever a priority. I love dinner, I love making dinner, but the extra effort lately to plan it all out hasn’t been the easiest on my occupied mind. So I have been picking up these convenient meals from Freddies!
Okay, friends. Let’s make a list, shall we?
Why I love them
- I’ve yet to have one I didn’t like. They taste great. This Shrimp and Carrot Stir Fry in particular.
- No waste. Recyclable packaging. Perfectly proportioned. Which, for a family of two is paramount.
- I saw everything that went into the meal. No guessing about additives on the back of the ingredient list.
- For as simple as the ingredients are, the taste is shockingly delicious.
- Fresh!
- NO SUBSCRIPTION! One of the reasons I’ve never signed up for one of those meal prep deliveries is that I like to have the option to cook on my own. With this, I get to use it only when I need it. (which is a lot right now)
- Comes together in 20 minutes. PTL, give me all the time back into my life!
We might be living off of these for the next few months until I make the official leap to full time. But if you’re in the middle of crazy right now and just need something to take off your plate, let Freddies take care of dinner for you. You won’t regret it.

So, I have this open in my kitchen now, about to make it. I see that it says it comes w/ 1 cup flour, but the flour packet says 3/4 cup. Did you notice this? Did it make a difference in your pancakes? Kroger customer service is already closed for the day, so I’m unable to speak to anyone.
It didn’t make a difference for me!! I just used the packet and added water until it was the perfect consistency
