Pink Velvet Cookies are just the recipe needed to take your cookie to the next level. They are chewy, soft and all around beautiful!
1/2 cup butter, room temperature
1 cup white sugar
1 egg
1/4 teaspoon baking soda
1/4 teaspoon salt, heaping
1/2 teaspoon almond extract
1/4 teaspoon vanilla extract
1 drop of soft pink gel food coloring
1/2 teaspoon vinegar
1 3/4 cup all purpose flour
1 cup mini chocolate chips
Preheat oven to 375 degrees.
Cream butter and sugar together in a standing mixer with a paddle attachment until combined. Add in the egg and mix until it becomes slightly pale in color, about 2 minutes. While it is mixing on medium/low, add in the baking soda, salt, almond and vanilla extract, food coloring and vinegar. Scrape down the sides of the bowl with a spatula and mix again for another minute. Add in the flour a half cup at a time and once it is fully combined. Add in the mini chocolate chips. Mix the chocolate chips in fully with a wooden spoon.
With a medium cookie scoop, portion out the dough and roll into a ball in your hands then shape like a large marshmallow and stand up tall on a cookie sheet. Place your cookies 2 inches apart. Sprinkle mini chocolate chips on the top of the cookies and press in slightly.
Bake for 10-12 minutes and let cool 5 minutes until moving to a cooling rack.
