Just six short years ago, I walked down the isle to All of My Love in an almost dead sprint towards Daniel. It’s hard to remember a time now before being a half of a whole. Six years might seem like such an insignificant number, but all it means to me is that (about) 1,512 days ago, I made the best decision of my life.
I think, often, we view love as an overwhelming feeling of passion that sweeps us away so that we have no option in the matter. We have been so captivated by stories of fate, that we sometimes forget that free-will is much more romantic than serendipity. I chose, six years ago, to live a life loving Daniel. And he chose me, too. And we still choose each other today. Now THAT is romantic.
I always take inventory of my life on our anniversary—remembering all that has happened in this short period of time. I have lived an immeasurably blessed life with Daniel. It’s been full of laughs, lessons, and lean budgets. I wouldn’t trade any of these moments for any amount of fame or fortune. As much as I fancy myself a strong independent woman, he is my hero. He melts this cyborg right down to its core.
We don’t have anything planned for this day as it kind of snuck up on us this year. So I’m thinking breakfast in bed, maybe a nice little trip to The Home Depot. I don’t know if we’ll have enough time.
But, one thing is for sure; these little peaches and cream buttermilk pancakes will be eaten. They are so simple to make and come together super fast. I mean can you even handle these pictures? Yum.
I slather them in agave, but they are just as delish with real maple syrup. Because peaches and maple together are to die for. I added some cherries since I had them on hand, so feel free to keep it loose with this recipe. Maybe add some fresh basil or sprinkle it with brown sugar? Let this recipe go where it wants… everything but the kitchen sink?

Liven up your Saturday morning breakfast routine with this peaches and cream buttermilk pancake recipe. It’s so flavorful and can be ready within 20 minutes.

Ingredients
1 1/2 cups flour
1 teaspoon salt
1 tablespoon sugar
3 1/2 teaspoons baking soda
1 egg
1 1/3 cups buttermilk
3 tablespoons melted butter, more for cooking

3-4 peaches, peeled and sliced
6 ounces crème fraîche
Red cherries
Instructions
Mix the dry ingredients in a medium bowl, and add the egg, buttermilk, and melted butter. Stir gently, just until combined.
In a large skillet, melt one tablespoon of butter over medium/high heat. Scoop 1/2 cup of the batter at a time. Flip the pancakes once they start to bubble and the sides of the pancakes become firm. Add more butter to the skillet as needed.
Spread crème fraîche in between the pancake stacks, and pile on the fresh peaches and top with fresh cherries.
