I have been swamped lately with celebrating my birthday and spending some much needed time with friends and family. I’ve also been consumed with taking pictures of any and everything with my new camera. A beautiful Canon 6d. With all that time out and about, I must have missed the tornado that passed through my house. If you are like me, you have to have a clean house, stocked kitchen and laundry done to get any extra curricular activity in.
But here is the problem. All I can do is sit in bed and think about what it would be like to have a million dollars and have a maid service. Of course I would get the money from the Lotto, or maybe a dead rich uncle that I’ve never met — that way I wouldn’t be super sad about his death. But while I’m at it maybe I didn’t just win a million dollars, maybe I won 100 million dollars. I can account for 45% of it being taken away from taxes. I think maybe I’ll get it in a lump sum that way I can buy a house with cash like all the Silicon Valley people are doing here in the Pacific Northwest. I’ll then have enough money to get that maid service to take care of this house. But could I trust them? Oh gosh, cookies sound good right now. I want cookies!
And that is pretty much how I got here: a messy house but a nice plate of thumbprint cookies.

Also note that I won’t stop plugging how amazing Jacobsen Sea Salt tastes. They are the only flakes I use for topping desserts, making granola, sprinkling on fried eggs, avo toast, etc. etc. etc.

Orange salted ganache thumbprint cookies. Jacobsen Sea salt brings this recipe to a whole new level. Perfect with coffee!

Ingredients
|| Thumbprint Cookies ||
1/2 cup butter, room temperature
1/2 cup confectioners sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
Zest of one orange
1 1/4 cup flour
|| Salted Ganache ||
1 cup chocolate chips
1/4 cup cream
2 tablespoons butter
1 teaspoon Jacobsen Sea Salt – plus more for topping
Instructions
|| Thumbprint Cookies || Cream butter, sugar, salt, vanilla and zest together in a mixer with a paddle attachment. Mix well for about a minute. Sift the flour and then add to the butter and mix until it forms a ball.
Remove the dough ball and place on a clean surface to roll out. You won’t need to dust the surface since the dough won’t be sticky. Roll into a long log about 1 1/2 to 2 inches thick and place on plastic wrap and cover. Set in the fridge to firm up for about 30 minutes.
Once the dough has set, preheat the oven to 350 degrees. Cut the dough three quarters of an inch and place on a cookie sheet. Bake for 12 minutes, take it out and push down in the middle with a 1/2 teaspoon measurement. Place back in the oven to bake for another 10 minutes. Once the cookies are done you may need to press the centers down again.
|| Salted Ganache || Put the chocolate chips, cream, butter and salt in a double broiler and melt all together until it turns into a smooth consistency. Once it has cooled down (only slightly) place the ganache into a pastry bag, cut a small opening and squeeze into the center of the cookies. Sprinkle the finished cookies with Jacobsen Sea Salt and enjoy!

What kind of chocolate chips do you use? Milk, Dark, Semi-Sweet? And where do you get the salt?
