Soft and chewy Olive Oil Chocolate Chip Cookies are the perfect quick cookie.
1/2 cup olive oil
1/3 cup sugar
1/3 cup brown sugar
2 teaspoons vanilla
1 egg
1/2 cup almond flour
3/4 cup plus 2 tablespoons all purpose flour
1/2 teaspoon salt
1/4 teaspoon baking soda
1 cup mini chocolate chips
Preheat oven to 375 degrees.
Cream the olive oil, sugar, brown sugar, vanilla, and egg together in a medium bowl. Add the almond flour, all purpose flour, salt, and baking soda. Mix until thoroughly combined. Fold in the chocolate chips.
Scoop the cookie dough out with a cookie scoop and place on a lined baking sheet two inches apart from one another. Bake in the oven for 10-12 minutes or until the center of the cookie is no longer shiny and has domed.
Let cool at least 20 minutes before eating.
