Olive Oil Chocolate Chip Cookies

I’ve been experiencing some neurotic anxiety which has caused me to repeat back to myself several times daily, “What problems are the real problems?” Having too many cookies on the counter from testing these Olive Oil Chocolate Chip Cookies? Not a real problem. Being unable to watch Season 16 of KUWTK because I’m too cheap to buy an E! subscription? Again, not a real problem. Being stuck at a fork in the road because there are so many directions to take, and I don’t know what I’ll do if I’m wrong, AND where did the time go, AND this is too important, AND my jeans don’t fit… AHH!!! Okay…real problems.

            I’ve reached a point in my life where all I want is a carb. Everything sounds gross with the exception of a chocolate chip cookie; conchas; rice-butter-salt-pepper; or pasta-butter-garlic-lemon zest. What is happening and why!??! I just don’t know. All I do know is my body takes the transitional seasons a little harder than most. Headaches, the sleepies, and a lot of weird things of that nature. I’m so very ready for some tulips and that smell of water pouring out a hose. But, darn-it, I need my appetite back.

           I’ll be normal again soon, but until then I’ll just be busy making and eating these Olive Oil Chocolate Chip Cookies. They are made with part almond meal and part all purpose flour which makes these cookies crackle so lovingly at the top—my favorite part actually. It creates a firm, almost shiny shell that keeps the soft vanilla-forward innards nice and moist.

Olive Oil Chocolate Chip Cookie

Soft and chewy Olive Oil Chocolate Chip Cookies are the perfect quick cookie.

Ingredients

Scale

1/2 cup olive oil

1/3 cup sugar

1/3 cup brown sugar

2 teaspoons vanilla

1 egg

1/2 cup almond flour

3/4 cup plus 2 tablespoons all purpose flour

1/2 teaspoon salt

1/4 teaspoon baking soda

1 cup mini chocolate chips

Instructions

Preheat oven to 375 degrees.

Cream the olive oil, sugar, brown sugar, vanilla, and egg together in a medium bowl. Add the almond flour, all purpose flour, salt, and baking soda. Mix until thoroughly combined. Fold in the chocolate chips.

Scoop the cookie dough out with a cookie scoop and place on a lined baking sheet two inches apart from one another. Bake in the oven for 10-12 minutes or until the center of the cookie is no longer shiny and has domed. 

Let cool at least 20 minutes before eating.

  3. This recipe is super easy and yummy! Yes you can taste the olive oil a little in the batter but you can’t taste it at all once the cookies are baked. I just happen to get pulled into something right after I made the dough, so I stuck it in the fridge for about an hour before I baked them and they turned out great. Note I did not measure the chocolate chips because life is too short, but this recipe was a hit. Great alternative to butter, especially for some dairy free friends I have! Thanks Karlee!!

  4. This recipe is the best! It’s an easy, one bowl recipe and the cookies are so good. The hardest part is waiting the 20 minutes for them to cool before eating!

  5. Just made these (second batch finishing up as we speak & I definitely did not wait 20 min to eat one) they are now the only chocolate chip cookies I will be making! I’ve tried many different recipes because i like my cookies to have crispy edges , crackly top and a chewy center. These are it! Thank you for the recipe
