Oh, hey! It’s been a while. Or, rather, two weeks. But who’s counting?
Clearly, I am.
It’s definitely time to sink our teeth into these Monster Cookie Blondies and have ourselves a moment. They are chewy and soft and filled with plenty of good things like chocolate chunks, m&m’s, chunky peanut butter, cinnamon, peanuts, and oats in addition to the good old standbys (butter, sugar, vanilla, egg, flour).
They’re cookies, but easier.
They’re cookies, but less clean-up.
They’re cookies, but fluffier.
And, they just kind of demand a girl’s night with French vanilla ice cream and a movie starring Leonardo Dicaprio. Blankets. Couch. Chocolate on the corner of our mouths.
Aren’t we trying to be more intentional about our time this Summer? I know I am. I’ve been waking up earlier and calling it a day around 4 p.m. Weekends have been for friends, family, and Daniel. These are the moments we just don’t get back. I’m even going to implement “Summer Hours” for Olive and Artisan. Starting in July. Maybe. We’ll see. You know what? Hold me accountable to this, won’t you?
And, you should definitely grab onto these moments too. Because, there are always seasons where work takes priority. But, there are also seasons where we need to stop, make these blondies, and invite our girlfriends over. Take a coffee break. Run a fun errand.

Chewy, soft and easy blondies with monster qualities!

Ingredients
1/2 cup butter, melted
3 tablespoons chunky peanut butter
1/2 cup brown sugar
1 teaspoon vanilla extract
1 egg
1 egg white
1/2 cup instant oats
1 cup flour
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1/2 cup chocolate chunks
1/2 cup m&m’s candies
1/4 cup peanut halves
Instructions
Preheat the oven to 350 degrees
Grease a 9×9 baking dish. Line with a piece of parchment for easy removal. *Not required.
Cream the butter, peanut butter, brown sugar, and vanilla extract together. Add the egg and egg white, and mix just until incorporated. Add the instant oats, flour, baking powder, cinnamon, and mix until incorporated. Fold in the chocolate chunks, m&m’s, and peanuts.
Spread evenly onto the prepared baking dish and bake in the oven for 18-20 minutes.
