The Day is finally here.
I have to admit this now. Gilmore Girls ruled my life for quite some time. I’m embarrassed to say how many times I’ve watched all seven seasons. Maybe it’s not embarrassment as much as it’s the fact that I’ve lost count.

I don’t know if I have ever been as excited as I am right now that the day is finally here. The Gilmore Girls movies are now on Netflix. Please don’t call or text, don’t e-mail or drop by. I’ll be in my pajamas, in my room, with a cup of very hot coffee, and a biscotti.
Biscotti moment.
Please don’t mistake my enthusiasm as being extremely basic. We all have a basic side in all of us, and this is mine. This is my time to wear I Love Lucy pajamas, relax after a long couple days of cooking Thanksgiving turkey, and watch what I assume will be the greatest for Netflix since streaming.
I four fourths don’t care.
As much as I wish I could eat all of the things they eat and in the quantities they eat them in, I’ll just sit back and enjoy this one cup of Mocha Chocolate Caramel Swirl-a-Chino and scrambled eggs and cheese. No pancakes with a side of pancakes.
Or panscake.
You guys, this drink, I cannot say enough good things about it. Super rich and delish. Plus, the whipped cream topping? Forget about it. This beverage is better than Starbucks. Yes, I really did say that. It’s made with real coconut milk. Not the kind you get in the box, the creamy Thai kind you get in a can. It’s made with serious flavor and a punch of espresso. If you don’t have an espresso maker, (BTW I love my Nespresso!) brew an extremely strong cup of coffee or make the coffee in a French press.
Coffee, Coffee, Coffee!
These pictures don’t lie. It’s the best drink I might have ever had the privilege of drinking. In moderation of course. But you guys out there in Gilmore land without the curse of diabetes, enjoy a large coffee bowl of this beverage. This Mocha Chocolate Caramel Swirl-a-Chino recipe with extra whip is an homage to the Gilmore Girls movies brought to you by Netflix.

Ingredients
4 shots of espresso or 2 cups strong brewed coffee
1 can coconut milk
1 cup 2% milk
1/2 cup sugar
1/2 cup caramel sauce
1 tablespoon cocoa powder
1 tablespoon vanilla extract
|| Whipped Cream Topping ||
1 1/2 cup heavy whipping cream
1/4 cup powdered sugar
Instructions
Brew the coffee or espresso and set aside.
Heat the coconut milk, milk, sugar, caramel sauce, cocoa powder, and vanilla in a saucepan until it just starts to steam.
Pour into a blender and blend for about 3-5 minutes until it starts to froth. Pour into a coffee cup.
Place cream and powdered sugar in a mixer and whip until soft peaks. Add a generous dollop to your coffee cup.
