Almost every other night we’ve stacked kindling onto newspaper and built fires in our backroom. It’s become my little sanctuary. A place to read, to work, and to snuggle up with my cats who always seem very keen to be right where I am. And by 9:00 at night the embers are just glowing and I’m warm down to my bones. I’m very much enjoying this season of life.
It’s the holidays – a time of year when I’m happiest. It’s also hard, and work gets unmanageable, and familial expectations are high, and money gets tight, and presents get stolen off the front porch. But, It’s also gingerbread making. And the allowance that we don’t need a perfectly tidy home as long as there’s cedar hanging from every corner and dried oranges hanging from it.
I’m already feeling this holiday season slipping from my very fingertips. But we’ll allow it since it’s followed by a Gentle January which is just as good for our souls as a crackling fire and chamomile on the belly. I can feel myself recovering from the long summer and I’m mending from the time without a kitchen. Life is good.
And when gatherings happen this time of year we always find ourselves deep into a mix of onion dip and a carton of sour cream. It’s a family staple, our always appetizer. But lately I’ve been making it from scratch and guests have been gobbling it up. Who needs potato chips when a pointer finger will do just fine!
It really doesn’t take much work, just a few tears lost over sliced onions and sometime caramelizing on the stove. A dash of seasoning salt, a generous heap of onion powder, a sprinkle of sugar, and a sizzle of apple cider vinegar – we’re well on our way to appetizer perfection. I highly suggest you give it a go this holiday season. It will be well worth the effort.

Sweet, caramel-y, and creamy homemade onion dip!

Ingredients
2 medium yellow onions
1 tablespoon butter
1 tablespoon olive oil
1 teaspoon seasoning salt (I prefer Lowrys)
1 1/2 teaspoons onion powder
1/2 teaspoon sugar
1 teaspoon apple cider vinegar
16 ounces sour cream
Chives or parsley for garnish (Optional)
Instructions
Cut the onion in half by the length, and thinly slice.
In a medium saucepan over medium/high heat, melt the butter and olive oil. add in the sliced onions and seasoned salt. Cover and let sweat for about 2 minutes. Uncover and continue to cook, stirring every 1-2 minutes. Cook until the onions turn golden brown. Add in the onion powder, sugar, and apple cider vinegar. Continue to cook, uncovered, stirring every 1-2 minutes until the onions have turned a deep golden brown.
Let cool on the stove for about 10 minutes.
Mix the onions with the sour cream and place in a serving dish. Garnish with chives or parsley. Serve with potato chips and enjoy!
Notes
This makes a thicker dip than the one from a mix, you can thin it out if you prefer by adding 1 teaspoon of milk to the mixture at a time until you get your desired consistency.
