Well, well, well…I’ve taken on the end of summer and decided to do all the summer things before I give my final send off. Like this Goat Cheese Fig and Prosciutto Pizza. You knew that was coming, right? I’ve had so many happy feelings surrounding this pizza I can’t even begin to describe them. First of all, it’s beautiful. Second of all and most importantly, it’s insanely tasty.
Finding time to set aside all the busy that comes with longer days and get into the kitchen is a rarity in my life. I’m assuming yours too, which is why this pizza is hands down easy. Made easier by the organic, pre-made, frozen pizza dough that I found at Trader Joe’s. Yep, that was me making the best decision I’d made all day. Especially considering earlier that day I had made the decision to order some groceries on Amazon so I could continue on with my general hermit tendencies. Ordering groceries online is going to be the end of my social life.
But, back to this pizza. I did include a recipe for my favorite thin crust pizza if you so desire to take the extra steps. Which, might be worth it considering it really only takes 15 minutes to rest and then you roll out and top. See: me winning at summer.
Are you into sweet/salty pizzas like me? Daniel HATES them. I love some good ole’ pineapple on pepperoni and honey drizzled on cheese pizza BAM! Speaking of Daniel, he refused to eat this pizza. He is my all American grilled cheese, pepperoni, hot dog kind of an eater. I cannot get him to try new things unless the new things include popcorn on top of mac n cheese. Not complaining, because this pizza was ALL MINE. Nom nom nom nom.
As this summer starts to fade, what are some of the things you guys are doing? Any last things on your summer bucket list? I’ve got my list pretty much on lock down with the exception of making some freezer jam with my mom. We are thinking strawberry and peach. Once that is finished, my toast for the next few months will be next level.
Other things I’ll be doing to help curb my desire for all things fall is to make all the fun summer things that hardly get eaten in the dead of winter. Like some fresh kale salads or eating all the heirloom tomatoes I can get my greedy hands on.

Ingredients
|| Crust ||
1/2 cup warm water
1/2 teaspoon active dry yeast
1 teaspoon honey
1 teaspoon salt
1 1/2 cups flour
|| Toppings ||
1/2 cup whole milk ricotta cheese
4 ounces goat cheese
1/2 teaspoon salt
2-3 large figs
5 slices prosciutto
5 cherry tomatoes
1/4 cup frozen peas
1/4 cup parmesan reggiano
|| Finishings ||
Arugula
Honey
Balsamic reduction
Instructions
Preheat the oven to 425.
|| Crust || Place the water, honey and yeast in a small bowl and let activate for 5-10 minutes. In a medium bowl, add the salt and flour. Once the yeast is foamy add it to the flour mixture, and stir with a spoon until it comes together. Dump the dough onto a well-floured surface, and knead for about 2 minutes. Cover the dough, and let rest for 5 minutes.
Roll out the dough into a thin circle, and transfer to a pizza stone or baking sheet. Let rest while you prep the toppings.
|| Toppings || Place the ricotta, goat cheese, and salt in a food processor and pulse until smooth and creamy. Spread on the dough and arrange the rest of the toppings.
Bake in the oven for 12-15 minutes.
|| Finishings || Top with arugula, honey and balsamic reduction.
