I’m not sitting at my desk this morning. In fact, I’m not in the office at all. I am on my way to Portland to teach a middle school writing class. Gosh, I love writing. Doesn’t mean it’s easy for me. I just love the process. Ever since I was a little girl I would stay up late, in bed, writing. I wouldn’t let one person see it. But now that I let my friends, family and World Wide Web read my daily thoughts, why not share some tips with cute little tweens.
Advice such as:
Make sure to always misspell a word only to discover it after publishing. Then, when several people tell you about said word, try to graciously accept well-intentioned advice instead of burrowing into the ground.
Find someone or multiple someones to edit because commas, right? Invite them to all the sentence parties and then have an editor ask them to kindly leave.
Write a paragraph, delete it, write another, delete that one and finally rewrite what you wrote in the first place.
When you sit down to write, first make sure that you have checked Facebook notifications, while you’re at it check the Instagram feed. When that is done, pour yourself a glass of water. Actually, you might want coffee so while you’re up, start the kettle for some French press coffee. You could have missed something on Facebook while you were waiting for that water to boil so you should check out that feed again and find a Buzzfeed article you can get stuck on for a good half hour. Okay, you have your coffee, you have your water. Wait, Instagram.
I think these kids are going to have a lot to learn from me.
So, on busy days like today I default to the crockpot. Because there is nothing better than the middle of the week hitting you hard and coming home to the smell of sweet/spicy/creamy chicken curry victory. All that’s needed is a cup or two of jasmine rice placed in the rice cooker and wearing a much-needed pair of sweatpants. You deserve this.

Set this chicken curry recipe in the slow cooker and come home to a party in a crockpot. All the flavors come together for this easy five star dinner.

Ingredients
1 can coconut milk
1 box (32 ounces) chicken stock
2 tablespoons yellow curry powder
1/2 teaspoon cayenne pepper (1/4 for mild)
1 teaspoon ginger powder
2 teaspoons salt
1 clove garlic, fresh minced
1/4 cup brown sugar
2 chicken breasts
1 red bell pepper, cubed
1 green bell pepper, cubed
1 small red onion, cubed
2 large carrots, sliced
1 cup cream
2 tablespoons cilantro
Instructions
Place all ingredients the in the crockpot leaving out the cilantro and cream. Place on low for 4-6 hours. When the time is up take out the chicken and chop into bight sized chunks and place back in the curry with the cream and fresh cilantro. Serve over jasmine rice.
