A sweet pie filled with cranberry, apple and topped with a crumbly topping.
|| Crust ||
2 cups flour
1 tablespoon sugar
1 teaspoon salt
2 sticks butter, chilled
1/3 cup buttermilk, chilled (plus more if needed)
|| Filling ||
6 large apples
1 bag Stahlbush Island Farms frozen cranberries
1/4 cup flour
1/2 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 teaspoons vanilla
|| Crumble ||
1 cup flour
1/2 cup instant oats
1/2 cup sugar
1/2 cup brown sugar
1/2 cup butter, melted
For the crust, toss the flour, sugar, salt together. Grate the chilled butter with a cheese grater and toss into the flour mixture. Add in the buttermilk and mix together until it starts to barely come together. Add more buttermilk if needed. The mixture should be dry but will stick together when you squeeze together a handful.
Form into a disk and cover with plastic wrap. Set in the fridge for 30 minutes before rolling out and forming onto a pie plate. Place pie crust back in the fridge to chill until the filling is ready
Preaheat the oven to 400 degrees
For the filling, peel and cube apples and place into a large skilled. Cook the apples down for about 5-7 minutes over medium heat. Take off the heat and add in the flour, sugar, cinnamon, nutmeg and frozen cramberries. Mixt together and pour into the prepared pie crust.
For the topping, toss all ingredients together and place ontop of the prepared pie.
Bake in the oven for 50-55 minutes. let cool at leaste 2 hours before serving.
