I have been on the go busy, busy, busy, lately. More than normal and more than my body seems to be able to handle. So when I need a superfood that’s healthy, and has enough good things to give me the energy to get through the day, I depend on chia seeds. I put a tablespoon in my morning smoothie or mix it with yogurt and top it with fresh fruit, or, for today’s lesson, I make Coconut Chia Pudding. It’s like a literal burst of energy, who needs coffee? Scratch that, we all need coffee.
Chia seeds were eaten in handfuls from the ancient Mayans before going into battle. In fact, “Chia” means “strength”. Who knew? I use Bob Red Mills Chia Seeds. They are found in most grocery stores in the natural food section.
It should be noted that chia pudding is not a dessert since it’s not super sweet, but it is a wowzer of a power-packed breakfast, and mimics a tapioca pudding. If you don’t like the texture you can just put it in a blender adding more coconut milk until it’s a nice, smooth, creamy consistency. Plus, you can add however much agave you would like to sweeten it. Wholesome Raw Blue Agave is my favorite (fair trade, organic) and I’ve found it at most Target® stores in the baking section. Added bonus: since it’s plant-based, that makes this breakfast vegan!
Besides the energy it gives you, another perk is how easy it is to make! Just mix it up the night before and stick it in the fridge. Stir in the agave to your liking right before you are ready to eat, and let the check marks magically appear on your to-do list.

Coconut Chia Pudding
This easy, overnight, chia coconut pudding is full of little tiny bits of energy. It’s as simple as stir, set, and wait for breakfast.

Ingredients
2/3 cup chia seeds
2 1/4 cups sweetened, coconut milk
1 tablespoon coconut extract
1/4 cup shredded coconut, unsweetened
3 tablespoons agave or more to taste
2 tablespoons mini chocolate chips
Instructions
Place chia seeds, coconut milk, extract, and coconut in a medium bowl and whisk well. Make sure that the chia seeds haven’t clumped together. Place plastic wrap on the top of the bowl and set in the fridge overnight.
In the morning, take out the pudding and stir in the agave to taste. Top with extra coconut flakes and chocolate chips.
