These Cinnamon roll cookie sandwiches are probably the most time-consuming recipe of the week, but I wanted to give you all a challenge. Something that you’ll feel proud of. The Cookie itself is soft and insanely chewy. Not like a traditional sugar cookie at all. It’s made with brown sugar and there’s even a splash of milk in there too. So, you really get the cinnamon roll vibe.
The dough is divided in half, and to one part of the dough, we’re going to add some ground cinnamon. Once the cookies have chilled completely, we’ll then roll both cookies out and then roll them out further on top of each other. Roll them up, just like a cinnamon roll and you get this amazing cinnamon swirl in the middle of each cookie!
I’ve also got to tell you that, these cookies are just as delicious on their own. You really don’t need to take the extra step of making them into sandwiches. You can make the frosting and pipe a drizzle onto the top of each cookie.
