1 puff pastry sheet
3 peaches
1 egg yolk
1 tablespoon cream
1/4 cup honey
3 tablespoons water
1/4 teaspoon ground cardamom
Preheat the oven to 400 degrees.
Unfold de-thawed puff pastry sheet. Score the edge of the puff pastry with a knife a 1/2 inch around the boarder. Slice peaches very thin and arrange on the puff pastry.
Mix egg yolk and cream together and brush along the edge of the pastry. Place on a lined cookie sheet and bake for 15-18 minutes or until the edges look golden brown.
For the sauce, over medium heat, warm the honey, water, and cardamom until it bubbles completely. Take off the heat and spoon over the peaches.
