            We always have a tin of homemade Chex Mix at our holiday gatherings. And, sometimes we’ll even have the sweet version as well. Have you had that? It has cinnamon, sugar, butterscotch chips, nuts – all the yummy things. So, I wanted to make a Chex Mix dessert that everyone would love. I came up with these Butterscotch Chex Mix Bars. They’re like Scotcheroos. Oh man, wait – have you ever had a scotcheroos? Man, I loved those things growing up.

            First you slowly melt butterscotch chips, honey, and peanut butter until a nice and smooth batter appears. Pour that golden deliciousness all over the Chex cereal, peanuts, and pretzels. Mix it all up evenly before pressing into a prepared 9×13 baking dish. Drizzle on some melted dark chocolate. Swirl on some melted milk chocolate for contrast. Let the bars sit in the fridge to set for at least an hour. And, don’t forget to sprinkle with sea salt before serving. They just taste like December to me. Even though we honestly, we eat them year-round. They pack easily into sandwich bags and are best for long road trips.
