This last week I had some major/tiny victories in my life. Overall, they were all brought to me by the very intentional decision to slow down and say “no.” These things may seem boring to you — even tedious, but they have made me happy, and now I’m sharing them with you. Because I live to share, and share to over-share.

  1. I successfully cleaned out my work e-mail. It piled up so quickly. And by “so quickly,” I of course mean that I haven’t done it the whole duration of my time I’ve worked there. Oops. I feel like I’m winning at life, and my friend, Cambria, the email minimalist, would be so proud. However, my friend Ashley keeps a cool 34,416 unread emails in her inbox at all times which causes severe anxiety for anyone who sees her phone screen.
  2. Spring cleaning in August! So maybe I’m fall cleaning? I hired my sister, Maddy, to come and clean the baseboards, wash windows, windowsills, my pantry, the guest bathroom, cabinets and shelves. I’m on a cloud 10 if that’s possible. I’d like to think I’m a Rachel Green with the beauty, fashion and hair that just won’t stop. However, my life and personality mirror Monica — so much so that it’s a tiny bit unsettling. Food loving clean freak with competitiveness and control issues floating below the surface. All that to say, I’m feeling mighty fine about the state of my house right now. We are almost ready for fall/winter. Just need a good clean out of the heaters and servicing of the fireplace and we are ready to get fall-basic.
  3. The eclipse?!? Salem had totality of the solar eclipse yesterday, and people came in from all over the world! In an effort to stay indoors and get away from all the people, we Costco-ed up and hunkered down last week to stay away from the large group of people that came into our town. It was, hands down, one of the greatest things that I’ve ever witnessed. Once in a life time.
  4. I made my very own homemade sprinkles! They are so fun! I have a feeling I’ll be doing it a lot more often now that I know how easy it is! Plus, I can color them naturally so I made one set out of beet root powder and one out of macha (green tea powder). Let me know, and comment on this post if you want a post for homemade sprinkles!
  5. I made a list of all the fall things I want to make/re-shoot these next few months. Fall is my absolute favorite, and last year, when I was really sick, I had no time to enjoy it. It’s no wonder I’m craving it so much this year. I was sick all through September and finally diagnosed October 20th. I wasn’t fully on meal-time insulin until December. Last fall was a blur, and I am asking Daniel to put Hocus Pocus under lock and key to remove all temptation to watch it too early. However, I’ve done some fall things to curb some cravings such as: walking through Pier One’s Halloween/fall section, lighting a Bath and Body Works fall candle, purchasing some gingham runners on Amazon, watching You’ve Got Mail. I’d give you a bouquet of sharpened pencils if I knew your name and address — PERFECTION.

One thing I did to help with that feeling of “I’ve just had far too much Summer,” is to make Blueberry Lavender Buttermilk Galette! My inspiration? If you can’t beat summer, join summer! So, I’m trying to do all the last summer things on my to-do list before it gets foggy, crunchy, and amazing. Such as, making an easy-as-pie dessert, canning jams and marinaras, and using all that fresh basil while I still can. Send all the fresh produce my way!!!!!

This is a fine little number by the name of Blueberry Lavender Buttermilk Galette. It was going to be a crumble, which turned into a fruit bar before perfection struck in this galette. August’s motto: buy all the blueberries and test, test, test!

I have officially made the switch from a regular pie crust to making all my crusts with buttermilk. No other pie crust can come close to it. It makes the crust perfectly flaky, intensely flavorful, and it cooks perfectly. Slightly elastic so that the whole thing doesn’t just fall apart. So, you’ve been forewarned — Buttermilk pie crust everything.

Bonus: When that warm and comforting crust is filled with juicy blueberries with a hint of dried lavender — you won’t know what hit you. Get ready for a sweet pop of blueberry flavor that is only accelerated by the subtle taste of lavender. Yes, I’ve truly outdone myself. Don’t mind if I make this far into the fall months as well. Can’t get enough.

Blueberry Lavender Buttermilk Galette

When you need pie but not the extra work, reach for this recipe for Blueberry Lavender Buttermilk Galette. Flaky crust filled with juicy blueberries.

Ingredients

|| Crust ||

2 1/2 cups flour

1 teaspoon salt

2 teaspoons sugar

1 cup butter, cubed

1/3 cup buttermilk

|| Filling || 

1 1/2 lbs blueberries

Juice of one lemon

3/4 cup sugar

1/3 cup flour

1 1/2 tsp dried lavender

1 egg for an egg wash and finishing sugar (if desired)

pinch of salt

Instructions

|| Crust || Pulse the flour, salt, sugar, and butter together until the butter is pea-sized. Add the buttermilk, and continue to pulse. Once the flour sticks to itself when you squeeze it in your hands dump out dough onto a floured surface, and work it together into a ball. Flatten dough into a disk, and cover with plastic wrap. Place in the fridge to chill for 30 minutes.

|| Filling || Mix the blueberries together with the lemon juice, sugar, flour, lavender, and salt. 

Preheat the oven to 400 degrees.

Roll out the dough into a 12-inch circle adding more flour to the surface when needed. Transfer the dough onto a baking sheet or pizza stone. Dump the blueberries in the center of the circle leaving a 2-inch margin around the edges. Fold the edges of the dough in toward the center. Brush the crust with an egg wash and sprinkle with finishing sugar. 

Bake in the oven for 40 minutes. Let cool for at least one hour before serving.
