Hello, not-so-guilty Banana Peanut Butter Cake Brownies! So, these chocolate goodness bites are filled with protein, potassium, and coconut oil! What better way to eat a brownie, I ask you? Still has a good amount of calories but what dessert doesn’t?
I have been on a peanut butter binge lately. I usually don’t eat it at all because it’s one of those foods that’s hard for me to stay under control with. I love it—a little too much. So, I tend to only keep it around in small doses just in case I get the urge to make a peanut butter cookie apple crisp. But lately, it’s has helped keep my blood sugar at normal levels. Instead of snacking or eating a piece of chocolate to stabilize my numbers, I just eat a scoop of peanut butter. Hello, 190 calories a serving. Calories are my enemy.
Try and stop me from putting it on a piece of toast with honey. I can’t. I’m full-blown addicted again. Must control my peanut butter obsession before I no longer have pants that fit.
But, I guess it does have protein in it so it’s really not THAT bad when it’s kept in moderation. MODERATION, KARLEE. Oh gosh, though. When peanut butter and chocolate come together it’s euphoric. You think I’m being dramatic, but I’m sincerely obsessed with the magic of peanut butter – bananas – chocolate all swirled together into one satisfying concoction.
Might as well drizzle some more chocolate and peanut butter on top, right? For good measure.
I like to add a little leavening (baking powder) to some of my brownies. Not all of my brownie recipes but there is just something about a little bit of air and bounce coming through that chocolate carb-filled treat. I do have one brownie recipe that I haven’t put on the blog yet that doesn’t use any leavening and it’s amazing, dense, fudge-y and moist and in no way can it be termed “healthy.” Slap a big ole scoop of melting ice cream on top and YES!
Okay, but this recipe is not that. It’s light and moist yet filling in small portions. Plus, absolutely perfect for you if you want a little something sweet and decadent but not have “butter guilt.” That’s my motto lately, keeping my treats moderate and my veggies overloaded. Ingredients
|| Banana Peanut Butter Brownies ||
2 ripe bananas
3/4 cup coconut oil, melted
2 eggs
2 teaspoons vanilla
1/2 cup peanut butter
1 cup whole wheat flour
1 cup coconut sugar
1 cup cocoa powder
1/2 teaspoon baking powder
pinch of salt
|| Drizzle ||
1/2 cup melted peanut butter
1/2 cup melted milk chocolate
Instructions
Preheat the oven to 350 degrees and grease a large casserole dish.
In a standing mixer, with a whisk attachment, beat bananas until they are pureed. Add the rest of the wet ingredients and mix until combined. Add the dry ingredients, and whisk together for about a minute or two on medium speed.
Pour into a casserole dish and bake on the middle rack of your oven until the center has firmed, about 30-35 minutes.
Drizzle melted chocolate and peanut butter all over the brownies.
