The kind of friends that will comfort each other in the midst of a hard week. Or, unite to celebrate the sunrise on a Saturday morning.
I’m deep in the throes of August. It’s deceptive how busy this month can get while trying to pack in a very big project. It feels like a lot. It feels like I’m behind. It feels like I’m going to have to push a deadline. I’m okay with that. As long as I’ve scheduled time to make rest a priority, I will survive with only a slight cold in the mix.
This is why we need a simple look at breakfast. I should call it “occasion breakfast” since my usual breakfast consists of sourdough toast either buttered or peanut buttered and occasionally honeyed. But, when we’re feeling a little fancy, when we have a Saturday all to ourselves or a weeknight breakfast for dinner planned, this almond-crusted French toast makes a lovely and welcomed appearance. It’s coated with almonds that toast up on the griddle like a champ. The eggy batter has a little bit of nutmeg and almond extract to bring some depth to this game.
So this is what we do.
- We keep sliced almonds on hand at all times and in bulk.
- We use whatever bread we have in the cupboard, but Texas toast is always preferred.
- We use our fingers to encourage the almonds to stick to the bread.
- We use fruit to top the toast whenever possible.
However you chose to brighten up your days, now is the time to do it. Life is short. Time with our people… it goes fast. Soak it up the way French toast soaks up sticky maple syrup. Carve out that time. Celebrate those small victories.
Almond Crusted French Toast
A perfect almond crunch to a soft, eggy french toast.
- Prep Time: 5 minutes
- Cook Time: 10 minutes
- Total Time: 15 minutes
- Yield: 8 1x
Ingredients
8 pieces of bread, Texas toast preferred
5 eggs
1/2 cup half and half
1 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 teaspoon nutmeg
2 cups sliced almonds
Instructions
Heat a skillet or a non-stick pan over medium heat.
In a medium-sized bowl, whisk the eggs, half and half, vanilla, almond extract, and nutmeg together. Place the almonds in another medium-sized bowl.
Dip one piece of the bread into the egg mixture first, and then into the almonds making sure the almonds stick to the bread by pressing with your hands. Be sure to coat both sides of the bread with both the egg mixture and almonds.
Place the bread on the griddle, and cook until each side starts to turn golden brown, about 3 minutes on each side.
Transfer to a plate and top with your favorite toppings.
