Simple dinner ideas continued. Remember my post a while back about my simple dinner formula? It’s still working. This is how Daniel and I eat about 75% of the time: Rice, meat, and veggies. We don’t eat like royalty everyday. If there are only 6 ingredients (minus the seasoning) that I have to worry about getting into my grocery cart, I’m in my kind of heaven. My kind of 6 Ingredient Hawaiian Bowls kind of heaven.

Okay, confession, I don’t really know what makes these bowls Hawaiian other than it reminds me of Hawaiian food that I’ve eaten. Kind of sweet meets smoky meets warm cinnamon deliciousness. But if you are Hawaiian and you’re wondering what I’m talking about, you’re not alone. It was the best way I could describe this dinner. It has similar flavors to the chicken dish I get at a little Hawaiian place near my house. However, this recipe is healthier for you and therefore can be enjoyed during the “I’m trying to be good during the weekday” schedule.
This meal is also been a meal-prep wonder. When my week gets really hectic, I make a large batch of food and portion it out for the week. I really don’t prefer this kind of cooking because I like to eat based on what my body is craving at the moment. Is that weird? But sometimes, I really don’t have the luxury of time and I need quick meals that aren’t coming out of the drive-up window.

But fast food is a treat for me. My thought is — if I’m cooking from home, from scratch, there are less preservatives, less fat, less sodium, and all around less unhealthy things going into my body. (but oh my gosh, Burgerville?)
So, as a way to stop me from driving to the nearest fast food chain, I meal prep and plan around these quick simple dishes. Hopefully, this recipe helps you too and gives you the extra nudge you need to cook dinner on an exhausting Wednesday night when you have dried coffee spilled on your white shirt, and mascara smeared across your right eye. Or does that just happen to me?
Print6 Ingredient Hawaiian Bowls
This recipe for Hawaiian bowls is perfect for meal prep and weekday meals alike. It comes together in thirty minutes and is as delicious as it is simple.
- Prep Time: 15 minutes
- Cook Time: 20 minutes
- Total Time: 35 minutes
Ingredients
1 medium sweet potato
8-10 Chicken tenders
1 red onion
1 green pepper
splash of olive oil
dash of salt and pepper
1 cup cilantro
3 cups cooked white rice
|| Spices ||
1 tablespoon paprika
1 tablespoon smoked paprika
1 teaspoon cumin
1 teaspoon brown sugar
1/2 teaspoon onion powder
1/4 teaspoon cinnamon
1 teaspoon salt
Instructions
Preheat the oven to 400 degrees.
Mix the dry spices together and divide in half.
Peel and chop the sweet potato and add to a bowl with half of the dry spices. Stir until completely combined. Place on a greased baking sheet. Add the rest of the spice mix to the chicken tenders, toss, and add to the baking sheet. Slice and toss the red onion and the green peppers together with a splash of olive oil, salt and pepper and add to the same baking sheet.
Bake in the oven for 15-20 minutes until tender.
Serve over rice with cilantro. Optional: Drizzle with Cilantro Ranch Dressing
