Christmas week is upon us. Are you ready? I know I’m not. I still have tons to do at home, for the blog, for work, Christmas shopping, Christmas wrapping, Christmas movies – it’s never ending. But I’m focused on the fact that, in the end, on Christmas day, it will all be done. I’ll be snuggled up with family at my grandma and grandpa’s house in Washington and I will have survived another year.
Saturday morning Daniel and I got up early because apparently we are 65 years old and can’t sleep past 7:00 AM anymore. So I made a batch of my Mexican hot chocolate and put some homemade marshmallows* in it (a shot of coffee in mine) and we spent the morning in bed watching Home Alone 2. Hi-a pal.
How did Joe Pesci agree to do both movies I will never know but we are so frish-aresh-a-fa-cha happy he did. So if you all find the time some morning to drink hot chocolate in bed I think this recipe would agree with you. Because, one bag of chocolate chips, man.
*I use Martha Stewart Marshmallow Recipe. Because they are great and because they were the first recipe I used with my mom too many Christmases ago.

Creamy Mexican Hot Chocolate with a punch of cinnamon. This recipe is sure to be a family hit, perfect for snow days and lazy mornings.

Ingredients
Half gallon of 2% milk
1 cup of sugar
1 bag of chocolate chips (or 2 cups)
2 heaping tablespoons cocoa powder
2 tablespoons of ground cinnamon
1 tablespoon of vanilla
Instructions
Dump all the ingredients in a pot or Dutch oven over medium-high heat. Stir until chocolate has melted, then every few minutes until the cocoa is heated to your desired temperature.
